Here’s a family favorite recipe, that’s only 30 minutes to make! Enjoy!
THAI NOODLE BOWLS
INGREDIENTS (serves 8):
1lb. spaghetti (gluten free if desire)
1/4 cup oil
5T soy sauce (gluten free if desire)
2tsp rice vinegar
1/2 tsp sriracha (more to taste)
1/4 cup peanut butter (almond butter if desire)
2 T honey
2 garlic cloves, minced
1 green onion, minced
1 bell pepper, sliced thinly
1 carrot, julienned
1/3 cup cilantro, chopped
1/2 cup dry roasted peanuts (almonds if desire)
2T sesame seeds
DIRECTIONS:
Cook spaghetti until al dente.
Meanwhile, in a small mixing bowl, combine the vegetable oil, sesame oil, soy sauce, rice vinegar, sriracha, peanut/almond butter, honey, minced garlic and minced green onion. Whisk vigorously until smooth.
Drain the noodles and return to the same large pot. Add the sauce, red bell pepper, carrot, cilantro, peanuts, crushed red pepper flakes and sesame seeds. Toss until combined, serve and garnish as desired.
Add more sriracha if you love spicy like me :-)
